A Christmas Tradition
You don’t need to wait until Christmas to enjoy chocolate covered peanut butter balls but it does seem to be something I make every holiday season. It just seems right. These treats are a nice addition to any tray of Christmas baking.
Chocolate covered peanut butter balls are very easy to make and do not require a lot of ingredients.
Tips and Tricks
- Please use chocolate baking squares for melting and coating the peanut butter balls. Chocolate chips have stabilizers added to them so they will hold their shape when baking which can make the melting process more challenging. Baking squares melt wonderfully.
- I find that using a fork or something with two or more thin prongs is best for dipping the peanut butter balls in the melted chocolate. Dip and roll the ball and then tap the fork on the side of the bowl to remove the excess chocolate.
- Pick a tray that will fit in your fridge and cover it with parchment paper. This makes clean up so much easier!
- If you don’t have a double boiler you can use a heatproof bowl that will sit just on the top of a pot. You don’t want the bowl to be sitting directly in the water during this process. Plus, the water should not be boiling, just simmering.
Chocolate Covered Peanut Butter Balls
Ingredients
Peanut Butter Ball
- 1 Cup Peanut Butter Smooth
- 1 Cup Icing Sugar
- 1 Cup Rice Cereal Crushed
- 1 Tbsp Unsalted Butter Room Temperature
Chocolate Coating
- 6 Oz Semi-Sweet Baking Chocolate
Instructions
To Make Peanut Butter Ball
- Crush the rice crispy cereal into smaller pieces. This can be done in a blender and pulse a few times or add the cereal to a ziplock type bag and crush with a rolling pin or the bottom of a pot.
- Add the peanut butter, icing sugar, butter and crushed rice cereal to a medium bowl. Mix together thoroughly. I find a spatula works best.
- Roll small balls and place on a tray that will fit in your fridge. I used a 2 tsp cookie scoop but you can make them whatever size you would like.
- Cover the tray and place in the refrigerator for at least 2 hours.
Chocolate covering
- Break the chocolate squares up into smaller pieces.
- Melt the chocolate using either a double boiler or a heatproof bowl and pot. See tips and tricks above for more details on this.
- Roll each ball one at a time in the melted chocolate and place back on the tray.
- Chill in the refrigerator for at least an hour.
- Enjoy!

You don’t want the rice cereal to be a powder. Just crush it slightly. You can pulse the cereal in a blender a few times if you prefer but this is a fun task to give to your kids (or any adult acting like a child) if they want to get involved.
Roll balls and place them on a tray that you can cover and put in your fridge. This is one of those cake travel trays that happens to fit on the bottom shelf of my fridge. I use parchment paper to help with clean up plus it makes it easy to remove the balls once they are covered in chocolate.
Place the covered peanut butter balls back in the refrigerator for at least an hour. I tend to keep them in the fridge in a closed container so that they last longer than an hour 😉.
