I still have zucchini from the garden to use. I froze a bunch and I made Lemon Raspberry Zucchini Bread and yet, there was still more zucchini to use.

So welcome to, Pumpkin Zucchini Muffins sweetened with maple syrup.

I wasn’t specifically looking for a no-refined sugar recipe or anything like that, but I did want something different than the usual zucchini bread with chocolate chips. I like pumpkin and I was intrigued by the sweetener choice in this recipe.

The Recipe

This recipe requires two bowls and not a lot of steps, making it a quick-to-bake recipe. If you don’t have a lot of time, this is a good recipe for you! Plus, with only needing two bowls, clean up is quick.

Shred 1 cup of zucchini, skin and all. This zucchini made more than one cup, so I froze what was left over.

Make sure you use canned pumpkin puree. Not pumpkin pie filling.

Mix all your dry ingredients in the first bowl.

Add all the wet ingredients into a second bowl and mix those together. Then combine the dry and the wet ingredients. That’s it.

I liked the addition of greek yogurt. I’ve never made muffins with greek yogurt before. Overall, I felt these muffins were going to be a healthy snack.

The recipe made 12 regular-sized muffins. I chose to line my muffin tray as I don’t use cooking spray and didn’t feel like greasing each one of these muffin cups.

The Results

I really liked the website and all the beautiful pictures provided. I found the instructions were very clear and the ingredients were easy to find. I would try another recipe from this website.

As for the muffins themselves. It was mixed reviews in this household. As you can imagine, my son wasn’t impressed and didn’t ask for more. My husband liked them and thought it was a nice alternative to the sweet dessert-like stuff. Me? I could take them or leave them. I didn’t hate it, but I can’t say I would rush to make them again. They had an interesting texture. And not “interesting” in a bad way. They were light. Not dense, cake-like muffins.

I didn’t miss the refined sugar as I think having it sweet with the light texture would not have gone together. They were moist and an interesting alternative to the dessert-like muffins you get from coffee shops.

And nope, I could not taste the zucchini, despite being able to see some green pieces in there 😀.

Ultimately though, would I make them again? Not likely but I’m glad I did try it. After all, I’ve found another baker with some very yummy-looking desserts!
