Chocolate Covered Peanut Butter Balls

These chocolate covered peanut butter balls are easy to make and hard to resist. We make them every Christmas but they are also good anytime of the year.

Ingredients

Peanut Butter Ball

  • 1 Cup Peanut Butter Smooth
  • 1 Cup Icing Sugar
  • 1 Cup Rice Cereal Crushed
  • 1 Tbsp Unsalted Butter Room Temperature

Chocolate Coating

  • 6 Oz Semi-Sweet Baking Chocolate

Instructions

To Make Peanut Butter Ball

  • Crush the rice crispy cereal into smaller pieces. This can be done in a blender and pulse a few times or add the cereal to a ziplock type bag and crush with a rolling pin or the bottom of a pot.
  • Add the peanut butter, icing sugar, butter and crushed rice cereal to a medium bowl. Mix together thoroughly. I find a spatula works best.
  • Roll small balls and place on a tray that will fit in your fridge. I used a 2 tsp cookie scoop but you can make them whatever size you would like.
  • Cover the tray and place in the refrigerator for at least 2 hours.

Chocolate covering

  • Break the chocolate squares up into smaller pieces.
  • Melt the chocolate using either a double boiler or a heatproof bowl and pot. See tips and tricks above for more details on this.
  • Roll each ball one at a time in the melted chocolate and place back on the tray.
  • Chill in the refrigerator for at least an hour.
  • Enjoy!
